Time again for a quick, easy, and healthy recipe! Here's my go-to lunch a few days a week, once again because I'm lazy and this tastes so good. It's Buffalo Chicken Salad and has only four ingredients and requires zero cooking, a win-win, right?
- 1-2 tbsp. non-fat Greek Yogurt
- 3-4 oz. canned chicken breast or shredded cooked chicken
- 1 tbsp. Buffalo sauce (your choice of heat, I prefer the Mango Habanero)
- 1/8 c. chopped celery
Mix all ingredients in a small bowl. I start with the chicken and buffalo sauce, then add the Greek yogurt. Some days I want just a little heat, some days a lot!
Once mixed, you can add to whole wheat bread, a wrap, or a lettuce cup for a quick lunch. Or, because I'm typically hungry by the time I'm making it, I just eat it right out of the bowl.
This recipe serves one, but you can always increase portions to make this part of your weekly food prep.
